Our third year buying from Néstor Lasso, this Ombligon comes from El Diviso, one of Colombia's most exciting farms. Working alongside his brother Adrián and the team at Cata Export, Néstor has helped redefine what's possible with fermentation, producing coffees that have won international competitions and continue to push the boundaries of Colombian specialty coffee.

This Advanced Natural lot is the result of an incredibly precise processing protocol. Rather than relying on intuition alone, every stage has been carefully developed and refined, from multiple fermentations and thermal shock to rehydrating the coffee before introducing fresh cherries and completing a meticulous two-stage drying process. It's an extraordinary amount of work, but one that allows the Ombligon variety to express remarkable sweetness, sparkling acidity and the intensely fruity character that makes this coffee so unforgettable.
