Jhonatan Gasca is a new-generation coffee producer from Huila, Colombia, redefining what his family’s land can achieve. Rooted in tradition yet driven by innovation, his work bridges heritage and precision, producing coffees that are expressive, sustainable and beautifully crafted. This is coffee shaped by discipline and a deep respect for place; a producer-led vision focused on quality, transparency, and pushing Colombian specialty coffee forward.

Raised in Bruselas, Jhonatan broke from his family’s quantity-driven approach after studying ecological agriculture and returning from a near-professional soccer career. He now applies rigorous post-harvest techniques, beginning with selective hand-picking and flotation, followed by oxidative fermentation, pulping and 24-36 hours of anaerobic fermentation. A double-washed process and thermal shock wash remove mucilage before slow drying on raised beds, resulting in a clean, complex cup that reflects Jhonatan’s innovative approach.
