Sweet and fruity, bursting with currant and citrus. Embellished by gorgeous floral notes.
This particular lot is carefully fermented for 16-24 hours, shielded from direct sunlight, and then undergoes another density-based grading in washing channels. The cherries are immersed in water from the Gatomboya stream for 16-18 hours and taken to drying tables where they rest for 8-14 days, depending on the weather conditions at the time.
