In this area of Honduras, producers typically mill their own coffee, drying it on patios and raised beds as the weather permits. For the processing of this lot, Hernan makes sure the coffee is picked ripe, then it allows to dry on raised beds, leaving the fruit on the bean to “raisin-ify” - yes, much like a raisin or sultana! The best thing? Natural fermentation begins to occur, resulting in the creation of complex flavours, sugars, and a stunning coffee profile.
A longer and more complex process than the traditional washed method, this natural process promotes wonderful fruity notes, clearly on display in this cup.
