We look forward to coffee from Victor every year. This is our 4th year buying from Victor, his coffee is always outstanding and we are more impressed every year with his dedication to great processing.
This unique Tabi coffee was dry fermented with the mucilage attached for 48 hours. It was then gently washed and dried on raised beds for 12 days.
Developed by Cenicafé, the FNC’s research and development center, Tabi is a leaf rust resistant variety that combines Timor hybrid, Typica and Bourbon. According to Victor, the coffee pickers in his municipality prefer harvesting Tabi over other varieties, as the ample space between the branches and different cherry nodes make their job more comfortable
Like most smallholder farms in Colombia, Victor produces Parchment coffee (Parchment is when fresh picked cherries have undergone a fermentation process, pulped and dried to around 12% moisture).
In Colombia, there is a daily price set against the market price. Most smallholders take their coffee to a collection station to sell their coffee at this rate. In Victor’s case, the daily rate was approximately 714,000 pesos per carga. The price Victor received was double this at 1.56 million pesos per carga.
